Injeolmi is a popular Korean rice cake that’s perfectly soft, chewy, nutty and mildly sweet - it remains to be one of our most loved afternoon snacks and we decided to take some inspiration for our new flavour.
Our Injeolmi Cake has layers of vanilla genoise sponge filled with light roasted soybean cream and topped with our homemade injeolmi ricecakes (or mochi!)
For those curious critters, injeolmi is very similar to kinako; both being roasted soybean powder, and we import ours straight from the land of Kpop.
